Pinterest Project: Mug cakes delicious, easy treats

If I have the option to take the easy route and have it be just as effective as a more difficult one, I’ll make it happen.

Mug cakes are a phenomenon I fell in love with about a month ago while perusing Pinterest in search of something sweet. In the past, I’ve tried to make mug cakes but to no avail, as they never tasted as delicious as I wanted them to. Thanks to some time with my microwave I have now found that they aren’t that difficult.

It’s easy. Just follow a couple of rules: First, don’t panic when the cake rises above the edge of the mug. Just let it happen. Second, have fun. Don’t be afraid to experiment and add or substitute ingredients. You can easily spend an hour playing around with the recipes.

I like to eat fairly healthy, but I am also a human being and love sweets. Mug cakes are for those of us who crave something sweet for a midnight snack but don’t want to be caught by our roommates at 1 a.m. making a full pan of brownies for ourselves. We’ve all been there.

I decided to stray from the traditional chocolate and be adventurous with some different flavors. The best one I tried was the blueberry, and I took the liberty of adding some white chocolate to make it even tastier.

-4 tablespoons of flour

-5 tablespoons of sugar

-1/2 teaspoon of baking powder

-1 egg

-3 tablespoons of milk

-3 tablespoons of oil, as many blueberries and white chocolate chips as your heart desires.

1) Mix all of the ingredients, except for the blueberries and white chocolate chips, together in a mug big enough to hold everything. Carefully stir in the blueberries and white chocolate.

2) Throw it in the microwave for about 50 to 65 seconds, or until the middle of it is still a little bubbly. It will continue to cook from the heat once you take it out.

The one factor that can be different for everyone is the microwave. I’d tell you to get to know your microwave, but nobody’s got time for that. What’s the easiest solution? Watch it and keep the cook times to a minimum. If you’ve got to close the door and cook it a little longer, so be it.
